It hit 60 degrees today and you know what that means...time to bust out the grill! Thank heaven for the wonderful grill! My husband loves to grill so I plan a lot of grilled meals when the weather is warmer so you know what that means? Less time for ME in the kitchen! Plus, because Josh loves it - what man doesn't?? - we both win! This chicken is especially good when enjoyed with a lime beer and myChili Lime White Bean Salad.
Amazing BBQ Chicken
3 pounds chicken tenderloins
1 1/2 cups ketchup
1/4 cup Wochestershire sauce
1/4 cup apple cider vinegar
2 tsp. Sriracha chili sauce
1/2 cup lime beer
1/4 cup honey
2/3 cup brown sugar
1 garlic clove, minced
1 tbsp. smoked paprika
1 tbsp. Dijon mustard
salt & pepper to taste
Place chicken in a Ziploc bag. In a medium sized bowl, whisk the rest of the ingredients together and set aside 1/2 cup of marinade. Pour the rest over chicken. Seal the bag tightly, squeezing as much air out as possible. Set bag in a bowl so nothing leaks out and set in fridge for 2-4 hours. Heat grill to medium high heat. Grill chicken for 6-10 minutes, basting with reserved marinade. Take a deep breath in and smell the delectable aroma of the grill, bbq sauce and chicken...summer is here!
