So healthy, so satisfying!
Here's what you need to make this simple, delicious & super healthy salad:
Veggies & Beans:
2 Roma tomatoes, diced
1/2 orange pepper, diced
1/2 yellow pepper, diced
1 1/2 cups frozen corn, thawed
2 15 oz cans white beans
1/4 cup red onion, diced (I didn't have any on hand, but normally I put this in for extra zest)
Combine all ingredients in a large bowl. Set aside.
Dressing:
juice of 2 limes
1 garlic clove, minced
1/4 cup canola oil
1 tbsp. rice vinegar
2 tsp. chili powder
1 tbsp. sugar or honey
1 handful of cilantro, stems removed
1 tsp. salt
1/2 tsp. pepper
Whisk all ingredients together. Pour over veggie mixture. Toss to coat. Cover with plastic wrap and let rest in fridge for several hours, stirring once.
*Feel free to add a diced avocado, pineapple or mango...it would give this salad an amazing sweet and tangy essence! Serve by itself as a side or on fish tacos!
