Anyone mind if I eat it right out of the bowl?
It's been 4 loooong years since I've had sweetened condensed milk but here it is! The flavor is amazing, it has the consistency of soft pudding, and can seriously be eating straight out of the bowl (not to mention it made the house smell terrific too!). Besides the time factor --it takes about 90 minutes-- it is a cinch to make. You need to stir every few minutes so stay close to the pot. I washed some dishes, cleaned the kitchen, and colored with my kids right at the kitchen table to stay close to the stove.
Dump coconut milk, almond milk, creamer and sugar in pot. Turn heat up to medium high until you get a simmer. Then turn pot waaay down to low. Keep it here for approximately 90 minutes, whisking every 2-3 minutes.
After 90 minutes, the milk should stick to the back of your spoon. It will thicken up even more when chilled. I'm going to use this in my DF/EF (dairy-free, egg-free) Key Lime Pie next week, so stay tuned!
DF Sweetened Condensed Milk Recipe
1 can full fat coconut milk
1/4 c. unsweetened almond milk
2 c. soy creamer
1/3 c granulated sugar
1. Pour all ingredients in heavy-bottomed pan. Heat over medium-high until mixture simmers.
2. Turn stove to low. Whisk every 2-3 minutes for approximately 90 minutes until mixture coats the back of a spoon. Pull up a chair to the stove and take some time to catch up on your newest book on your iPad or Kindle. Mixture will reduce to approximately half or a third of the original amount.
3. Pour condensed milk into bowl or glass jar. Let cool to room temperature.
4. Store in your fridge for up to 1 week.
