These bars are simply delicious! While they don't quite fit the bill for "healthy" cookie bars--all the sugar!-- they do have flaxseed meal, vegan butter, & VEGAN white chocolate chips! They are chewy and slightly tangy with the dried cranberries. The flaxseed adds a healthy dose of omega-3's and fiber. If you reduce the sugar you may be able to call these bars healthy and even have one for breakfast...as I've been known to do!
Just a note about HIGH ALTITUDE....I bake at 6,800 feet elevation. This affects a lot of things when baking. For one, my flour is way more drier than someone's at sea level therefore I have to use about 1/4 cup more liquid per recipe. You may need to decrease your liquid if you are at a lower elevation. Also, I cannot use as much sugar, less 1 tbsp. or 2, because baked goods brown quicker up here in the clouds. Also, baking time is slightly longer. You may need to adjust your recipes accordingly. Just watch your food as it bakes in the oven to make sure it doesn't overly brown. Coming from 800 ft elevation to over 6,000 ft....Believe me, it took some trial and error to accommodate my recipes for high altitude.
King David White Choco Chips -- Dairy free!!
You can see that these yummy dairy free white chocolate chips are irregular shaped and sized which I think is simply awesome! It looks like an actual human being made your food instead of a machine! They are creamy and vanilla flavored. Simply delicious!

Cranberry Oat White Chocolate Chip Bars
1 c. Earth Balance butter, softened
1 c. granulated sugar
1 c. packed brown sugar
2 tbsp. flaxseed meal
6 tbsp. warm water
1 tsp. vanilla extract
2 1/2 c. flour
1 1/2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
2 c. one-minute oats
2 c. King David Gourmet White Choco Chips
1 c. dried cranberries
1 c. sweetened coconut, optional
Preheat oven to 350 degrees. Grease a 9x13 pan. In a small bowl, whisk flaxseed meal and water together. Set aside to thicken. In a large bowl, cream butter and sugars until fluffy. Add flaxseed mixture and vanilla. Beat on med-high for 1 minute, scraping the bowl occasionally. In another bowl, whisk the flour, cinnamon, baking soda, and salt. With mixer going at lowest speed, slowly add dry ingredients. Just before it looks like the dough is completely mixed together, stop the mixer. By hand, stir in the oats, white chocolate chips, dried cranberries and coconut. Don't over stir or you will get tough bars! Pour dough into greased pan and flatten out with your hand or spatula until even on top. Bake for 40 minutes. Let cool before cutting. Enjoy!
